4-6 leaves of basil cut into strips (scissors work best)
1/2 cup diced tomatoes
2 Tb Extra Virgin or regular olive oil
salt and pepper to taste
1 garlic clove finely diced
drizzle of balsamic vinegar (optional)
1/4 cup finely diced red onions (or 2 Tb if you don't love onions)
1 ripe Avocado
1-2 slices of bread toasted to your likeness
1 over easy egg or scrambled (optional)
Lets Get Cooking:
In a bowl, combine the basil, tomatoes, onions, salt, pepper, garlic, and olive oil. Mix until well combined. Let it sit in the fridge while you prep the other ingredients and toast the bread. You can also make this portion well in advance or the day before.
Cut the avocado into strips, or if you prefer mashed use a spoon and smash it. Lightly salt the avocado and place it on top of the toasted bread slices.
Remove the tomato mixture from the fridge and spoon it on top of the avocado. Lightly drizzle the optional balsamic vinegar over the tomato mixture.
You can also add an over easy egg on top for a super filling and easy breakfast. Another option would be to add some arugula over the tomato mixture as well.
