Air Fryer Vegan Zucchini Spears

If you have an air fryer, you may find yourself wondering what all you can make with it. You can think of air fryers as an oven that applies more direct heat than an actual oven, and without deep frying it. You won't get the exact same results if you air fry versus deep fry, but you can get it pretty close, and the savings in calories, oil, and cholesterol will make you feel much better about eating it.


Zucchini is one of the more plain tasting vegetables in the squash family, so I like to dress it up in the air fryer by adding a crumb coating to it. You can use cheese like parmesan, make it vegan with a vegan parmesan or like in this one, I crumbled up some vegan pork rinds!


 

Ingredients:


1 cup parmesan/vegan parmesan/crumbled porkless rinds or breadcrumbs

2 zucchinis cut into spears (so lengthwise, or you can cut them chip style)

1 cup milk or unflavored plant based milk

salt and pepper to taste

spray oil


Lets get cooking


1. Place the parmesan or breadcrumbs in one container, and the milk in another. I did a 50/50 combination of the crumbled rinds and parmesan.




2. With tongs or your hands, place the zucchini spears in the dry mix and turn it to coat all sides, then shake. Then use your other hand, as the wet hand, to transfer it to the milk and turn to coat all sides, then place it back into the cheese mixture for the final coating.


3.Since you are air frying, spray the zucchini with spray oil to help it get a crispy crust.


4. Place the zucchini in the basket after spraying it with oil. Turn the air fryer to 400-425 for 6-8 minutes. Flip them and cook again for another 3-4 minutes depending on how well your air fryer is crisping them up. You may need to go longer or flip again, respray with oil, and let it go longer if you are not getting a crust to your liking.
